Kerry LowLow Snack Packs

As a bzzagent, I got the chance to try Kerry LowLow Snack Packs for free.

Really yummy little snack and great if like me, you’re counting your calories. It is satisfying as a snack or as a side for my lunch, and surprisingly full of flavour!

My favourite is Red Pepper and Onion Chutney!

Below was my lunch after my 30 day shred workout:

Creamy Chicken Mince Lasagne

Salaam!

So I made this the other night…delish! I don’t always make everything from scratch to save time

Serves 6-8

Ingredients

  • Chicken mince (500g)
  • Lasagne sheets x 8
  • 1 jar of Ragu red lasagne sauce (500g)
  • Plain flour (half a cup)
  • Vegetable oil (6 tbspn)
  • Milk (500ml)
  • Garam masala (1 tspn)
  • Chilli powder (half a tspn)
  • Salt (1 tspn)
  • Medium Cheddar cheese (100g)

Prepare the white sauce

  • Put 4 tablespoons of oil in a pan on low heat, when warm add the plain flour

  • Stir until mixture is smooth
  • Put the pan on full heat, add the milk slowly and keep stirring until the sauce is bubbling
  • Add in half a teaspoon of salt and 20g cheese
  • Once the sauce is smooth and creamy, take off heat and put to one side for later

Prepare the mince

  • Put 2 tablespoons of oil in a pan, when hot add the salt,  garam masala and chilli powder

  • Add the mince, put on medium heat and mix regularly until mince browns (approximately 7 minutes)
  • Stir in the red lasagne sauce and remove mixture from heat.

Prepare the lasagne

  • Spread a third of the mince mixture on the bottom of an oven dish

  • Cover with a layer of lasagne sheets
  • Spread half of the remaining mince mixture over the lasagne sheets
  • Pour over a third of the white sauce evenly
  • Add another layer of lasagne sheets
  • Put the remaining mince mixture over the lasagne sheets
  • Pour the rest of the white sauce over the mixture in an even layer
  • Coat with the cheese (grated)

Pop into the oven for 30 minutes (gas mark 6) or until cheese is a delicious golden brown. I had to take mine out a little early as the kids were hungry.

 

 

Serve and enjoy!

Homemade tuna sub for brekky. ..yum!

Ok so it might not be 100% homemade as the baguette’s from Tesco but close enough! Ingredients: Tuna flakes, double gloucester cheese, tomatoes, lettuce and mayonnaise all mixed together!
